Air Fry Buffalo Chicken

Simple, super yummy and quick. Air frying can be a tad hit and miss with results but this was an idea that a changed from another tiktoker and gave it a slight upgrade.

This is now requested weekly by the family and well worth trying yourself.

It works both way in that you could have it with rice as seen here or nestled between a toasted brioche bun. Either way, super yummy!!











For 2 hungry adults




Ingredients:


2 Chicken breasts

Rub:

1 Tsp garlic granules

1 Tsp onion salt

1 Tsp smoked paprika


Sauce

3 Tbsp Franks buffalo sauce

1 Tbsp Golden syrup

3/4 cup of Mayo


Finish

handful of chopped spring onions

Handful of fried onions



Method:


Take your chicken and score the meat in both directions.


Take a small bowl and mix your rub ingredients together then liberally apply to the chicken breasts on both sides


Set your Air fryer to 200c and 22 mins then start. Once it gets to 20 mins open the draw and spray with oil then place your chicken inside scored side facing upwards.

Pour around 2 - 3 Tbsp of the sauce over the top of each breast and using the back of a spoon make sure the sauce covers the meat and pushed into the cuts you made. (You need to retain some of the sauce to apply once cooked - so don't use it all!)

Place in the Air fryer and leave to cook.

After 15 mins of cooking check the top isn't burning, if it does place a small plate/saucer over the top (that can withstand the heat) then place back in the Air fryer.


Once 20 mins are up get a meat thermometer and check internals are 74c or above. If not place back in for a few more mins intil this temp is reached.


Once cooked, remove and apply a second amount of the sauce, I would roughly spread the reaming sauce evenly over the two breasts then put aside to rest for 5 mins.


At this stage, you can now apply the finial finish of chives and fried onions then injoy with rice or in a burger. If in a burger, i would suggest adding some pickled gherkins too!
