Air Fryer Chicken Shawarma with Fresh Garlic Tahini Sauce

Can I create a big flavour chicken shawarma in the Air Fryer?… Of course!! But it was also an excuse to just eat this supper yummy meal. If you have time I would also suggest letting the chicken marinate overnight to get a deeper flavour.
Food test feedback: Possibly add pickled red onion and chopped tomato to the wrap to give a more balanced flavour, therefore feel free to add this too!
Feeds two hungry adults

Ingredients
2 Chicken breast
Shawarma marinade
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger powder
1 tsp paprika
1 Tbsp of Lebanese 7 spice style blend
½ Tbsp of garlic paste
½ Tbsp of ginger paste
1 Cup yogurt
2 Tbsp of Olive oil
Garlic Sauce
3 Garlic Cloves
½ cup of Greek yogurt
2 Tbsp Tahini
1 Tbsp of Lemon (to taste)
Salt & pepper
For the wrap:
3 Tortillas
Half 1 red onion
3-4 Pickled gherkins
½ Cup of chopped lettuce
1/3 cup of chopped coriander
Hot sauce I went for (Cholula Chipotle)
To finish
Zest from half a lemon
Method:
To start, create your marinade, add all the marinade ingredients into a bowl and give a quick mix until fully combined. Then take your chicken breast and make large cuts across both breasts (This is to help take on more of that marinade flavour and to give you some nice crispy bits which is all just flavour. You want to leave this for 4 hrs but ideally overnight.
Now at this stage, you can make your garlic sauce in advance or while the chicken is cooking. So on that topic, to the sauce… if you have a blender add 3 Garlic Cloves, ½ cup of Greek yogurt and 2 Tbsp Tahini and blitz, then add lemon a little at a time until to your desired taste. Then again season with salt and pepper to taste. Then pour into a bowl and set aside.
If you don’t have a blender then just crush the garlic first then add to a bowl then follow the same as above but just mixing by hand.
Time to cook!
Set the Air fryer to 180c and 22 mins then once it gets to 20 mins open the draw, spray with a high temp oil, then place your marinated chicken in the draw and put back into the Air Fryer.
While the chicken is cooking you can focus on your salad to go in the wrap. Chop up the salad, onion, gherkins, and coriander.
Once the chicken has been cooking for around 15mins, check to see the top is not burning, if it is place a small saucer/plate (that can take the temperature) over the top to allow the chicken to keep cooking but stop burning. When 20 mins is up, check that the chicken is 74c+. Then remove and leave to rest.
Time to make the wrap!
Chop up your chicken, lay out your wrap, apply the garlic sauce then your chopped chicken and salad stuff and (if using) add hot sauce. Then fold in the sides, then fold over the front – tucking in and roll over (view video to see how I did it). Now repeat for the other 2 wraps.
(Optional) Give your Air fryer a little clean to remove any dried chicken marinade.
Then subject to your Air Fryer size, place 2 or 3 in the oven at 200c for 5 mins.
Then remove, cut in two, then shave over some fresh lemon zest and a tad more coriander.
