Air Fryer Lotus Biscoff bites

I love Biscoff and as you will have seen in my previous recipes, I like incorporating it into some classic dishes like apple crumble. The results are amazing. This time I got inspiration from a video making something like these bites but with chocolate spread... so why not replace that with Biscoff? and add a crunching topping?

And make it in the air fryer which makes it even easier.

The result was epic!!
















This makes 17 bites


Ingredients:


320g (1 Pack) of Jus-Rol puff pastry

Approx half a 400G jar of Biscoff spread

5 Lotus Biscuits (crushed)

4 Tbsp of belted butter

2 Tbsp of icing sugar





Method


Give your pre-made puff pastry a quick roll on a counter to remove any ridges, I spread out a little flour just to stop it sticking.


Spread out your Biscoff spread, then sprinkle 2/3 of your crushed biscuits on top.


Slowly roll your puff pastry up


Make approximately 15 cuts which is approx every 2cm


Turn on your air fryer at 200c give it 2 mins to warm up then spray with a high heat oil


Place approx 5/6 bites in the air fryer then cook for approx 8-9 mins until golden


While cooking - in a separate bowl mix the remaining crushed biscuit with icing sugar


Once bites are cooked, place on a rack.


Paint your melted butter on top then sprinkle your icing biscuit topping on top.
