Roasted Vegetable pizza with my ultimate seasoning topper

I do love a good pizza but how could you pile in more flavor? The idea came up of either a sauce or seasoning. After trying a few different combinations the below seasoning mix came out as a winner. Then with it being January, its probably better to go for a more healthy style pizza therefore roasted vegetable seemed the obvious choice. I also pre-roasted the vegetables which worked rather well! Then a good generous sprinkle of the season mix… oh yes!! - Job done!

Ingredients
Pizza dough: This mix would make 4 medium size pizzas
320ml warm water (between 38-43°C)
Approx 450g All-purpose flour (plus more for hands and surface)
7g Dried yeast (1 standard packet)
1 Tbsp (13g) granulated sugar
2 Tbsp (30ml) olive oil, plus more for pan and brushing on dough
1 Tsp salt
Topping (for 2 Pizzas)
3 Large mushrooms sliced
1 Small onion sliced
1/2 Green pepper sliced
1/3 Butternut squash cubed
1 Tbsp of mixed herbs
1 Tbsp olive oil
Salt & pepper
Cup Mozzarella Cheese grated
4 Tbsp Sun dried tomato pesto
Seasoning topper (for 2 Pizzas)
1 Tsp Smoked paprika
1 Tsp Garlic granules
1 Tsp Onion salt
1 Tsp Dried oregano
1 Tsp Dried fennel
Method
If not pre-made. Then start with pizza dough:
In a large mixing bowl place your dried yeast and sugar in with the walm water and leave to stand for around 5 minutes.
The add flour, salt and oil and mix until combined and sticking together (approx. 2-3 mins)
Remove from the bowl onto a floured surface and knead for around 5-8 minutes (if too sticky add a little flour, if to dry just slightly wet your hand and continue) – Remember that if you are finding it a tad dry it will get better the more you knead.
Tip: To test the dough is done, poke your finger in the dough, if the spot where you poked fills back up rather quickly then your dough is ready. If not, keep kneading!
Place the dough in a well-oiled bowl, place a little oil on the dough too, cover with a damp cloth and leave at room temperature for minimum 1.5hrs.
Remove dough mix, form back into a round bowl and divide into 4 and place on an oiled backing tray cover with cling film then leave again for 30 mins or until needed.
Your are then ready! If not using some of this mix cover with cling film and place in the freezer. (Will keep for up to four weeks in the freezer).
Pizza topping
Pour the prepared vegetables into an oil baking tray and add oil and dried herbs. Place in the oven 170c for 25 mins approx or until tender. Once cooked removed and put aside
Shape out your pizza, apply the wonderful roasted tomato pesto, then your roasted veg, then a good layer of cheese.
Place in your pizza oven (if using a conventional oven I would suggest running it up as hot as it goes and also heat up a pizza stone) once up to temp put in the oven until to your desired cooked level.
Mix your seasoning ingredients together.
Finish with the wonderful seasoning generously applied and enjoy maybe with some garlic mayo on the side 😊
