Steak Fajita with Sweet Potato and friends

High protein, healthy, great for meal prep and rather simple and easy to make - enough said?

Great flavor and made even more special if you have time to make on the BBQ with the added smoky flavor.


This scored a 9/10 form the critic with the only comment that possibly a corn on the cob would go quite well on the side - which I do agree with and worth adding too!









Feeds to hungry adults or two days of meal prep


Ingredients:


Baked Potatoes:

2 large, sweet potatoes

2 tbsp olive oil (1 tbsp for each potato)

2 tsp salt (1 tsp for each potato)


Fajita mix:

1 Tsp smoked paprika

1 Tsp onion powder

1 Tsp garlic powder

1 Tsp ground cumin

Juice from half a lemon

250g (approx.) sirloin steak

1 Onion sliced

2 peppers sliced


Avocado:

2 avocados, halved, stoned and mashed

Juice from half a lemon

Salt and pepper to taste


To finish:

1 red chili chopped

Sour cream



Method:

 




To start get your BBQ fired up and arranged for indirect cooking with target temp of around 220c (if using). Otherwise, set your conventional oven to 200c fan.


To make the marinade, put paprika, onion powder, garlic powder, cumin, lemon juice and  tbsp olive oil and a generous pinch of salt in a bowl and mix.


Pour half this mixture over the steak and cover the steak with it and cover until needed.

Now time to chop up your peppers and onions place in a bowl the pour the remaining seasoning mix into the bowl and give it a good mix and cover until needed.


Time to give your potatoes a quick wash then place individually on foil, cover with oil and salt wrap up and then poke holes all around to both let the steam out but also get some of the BBQ taste in! Now time to place either in the BBQ or oven for around 45 minutes until cooked and soft.

Place your avocado in a bowl then add lemon and seasoning. Put to one side. Now chop up your chili and put to one side too.


When the sweet potatoes are around 20 mins away from being cooked time to throw your steak on the BBQ and cooked until done to your preferred level for me I remove at 54c and leave to rest. If not using the BBQ then place your steak in a hot pan and fry until cooked. Once finished, remove and keep warm.


If using BBQ, now heat up a pan and fry off your vegetables with a little extra oil until they start to colour and soften. If not using BBQ then place the veg in the pan that you cooked the steak in and fry off the vegetables until they start to colour and soften.


By now your potatoes should be ready – remove.


Now time to chop up your steak and add to the vegetables mix. Give this a good mix. Taste and check if any seasoning is needed.


Time to plate up!

Slice the sweet potato then add your steak fajita mix, then some avocado, sour cream and sprinkle with chili – Admire your creation then enjoy!
